Panna Cotta

My husband loves panna cotta and since I was trying to make a few desserts I decided to try to make it. Again I haven’t made it often enough to get proper measurements yet and everything is according to taste. I usually follow the instructions of the gelatin that I’m using at the time. I add cream (dairy or coconut), vanilla, honey and gelatin to a sauce pan and warm it up. Once everything is dissolved I taste it and let it cool and put it in the fridge to set. Once that is done I make some fruit jelly to add to the panna cotta and that’s our desert.

Chocolate Mousse

We enjoy a certain chocolate mousse from a certain restaurant in Pune. After we moved we weren’t able to find a mousse we like, so one evening a looked on YouTube and tried to make some. Its not like the restaurant but it was close enough. It needs to made on demand as it doesn’t keep very well. I whip cream (dairy or coconut) with cocoa powder, honey vanilla and some Cointreau. Everything is measured according to taste and I haven’t made it often enough to get specific measurements yet.

For our son’s first birthday I decided to bake cupcakes for everyone. We had an old, really big microwave that took up too much space to be able to use the oven as well. So we stored the oven away since there wasn’t anywhere else that was safe enough to use it. I searched on YouTube for a stove top cake recipe and found this one interesting especially since it didn’t use baking powder. The cupcakes come out really nice and everyone including the dogs enjoy them.

My husband wanted to start using honey instead of sugar so I managed to figure out the quantities of honey for sugar. He also wanted to replace white flour for coconut flour but I wasn’t able to buy the quantity I need or make it. After researching the available recipes I decided it was too much trouble and wasn’t going through with it.

I put 6 eggs, 6 tablespoons of honey and 2 teaspoons of vanilla in my mixing bowl and whip it to soft peaks (like the YouTube video). Then I add 1 cup of flour (150g) slowly and I use a whisk to mix it in and then bake at 230C or 446F for 10 minutes.

Anchor Embroidery Floss

This was a wedding gift for a very close friend. Its the biggest cross stitch project I’ve done and took quite a while to complete. I made the chart using the KG-Chart program. The whole thing was an experience, trying to keep my son out of the floss and from the laptop keyboard while still keeping him around. Pushing to work faster and longer to get it done as soon as possible. But the end product was worth it all.

My hair has always been a bittersweet situation. I have always had hair that I like (still do). I prefer it long so that I can keep it tied up, it’s too thick to leave down, so I usually have it in a mess on the top of my head or in a braid. I don’t like middle partings because they remind me of school, I hate fringes, and really don’t like short hair because it gets in my nose, eyes and is just so irritating not to mention difficult to keep tied up.

After struggling to find a cut that I really liked, I visited a friend’s salon and gave her complete control of what to do with my hair. All I said was I want the length so I can tie it and I don’t want a fringe. She gave me a layered cut. We had been friends for about a year so she had seen what happens to my hair through the seasons and said that this would be the best cut for me to manage my hair properly and look nice. And man, she was right! I haven’t changed the cut since then and that was around 2008 or 2009. Since then I have tried my best to stick with the same lady but after she moved away everyone I tried messed it up. Then I just gave up and tried to cut it myself. I only need to cut once every six months when the ends get unhealthy.

After watching numerous YouTube videos I figured out what to do and gave it a shot. I was pretty happy with the outcome and have stuck with it. I don’t really like coloring my hair but since I already have a few grays and that seems to be freaking my husband out I thought I could bleach out the ends and then just dye the entire thing purple or blue and then the whites and bleached parts would get color and it would look funky. I haven’t managed to muster the courage to do it yet but soon.

This is the video that came closest to the amount of hair I have. Not bragging but its difficult to try to get a straight line with the amount of hair I have so I don’t bother with feathering and just try to get as close to a straight line as possible. I cut just under my chin and bleach from my nose down.

I’ve been using a scissors and my husband’s beard trimmer to cut my hair and it takes a long time because of the amount of hair I have. But I was able to use my dad’s hair trimmer and because that is wider and heavier, I’m able to cut my hair much quicker and in a straight line. I definitely recommend it.
